I mean I sure try to, but I end up just wondering why we took something so perfectly wonderful like a cookie and then tried to kill it off with healthy stuff like raisins?!

Friends! If you’ve been following my blog for awhile, then you know I have a special place in my heart for POST cereals.
When I was a child I got to spend part of each summer with my grandparents. My grandpa worked for POST and always had a large variety of cereal options for us to choose from. The first day at their house, Gramma and Grandpa would let us each pick our own box of cereal; which we then got to eat from any time we wanted throughout our visit.
Some of my favorite moments of feeling all kinds of special, involved POST cereal.

- She who, when nothing goes right; goes left. And eats a cookie. Because life is always better when you’re holding a cookie in your hand.
Friends, I encourage you to BE a tough cookie. However, you don’t have to eat tough cookies!
You, your friends and your family members deserve soft and delicious ooey-gooey Cinnamon PEBBLES™ Marshmallow Crunch Chocolate Chip Cookies that are packed with flavorful goodness. Haha!

Recipe for Cinnamon PEBBLES™ Marshmallow Crunch Chocolate Chip Cookies:
Ingredients
- 2.5 cups of Cinnamon PEBBLES
- 1/4 cup of milk powder
- 1.5 tablespoons of sugar
- 1/2 teaspoon of salt
- 4.5 tablespoons of butter, melted
- Pour the Cinamon PEBBLES in a bowl and crush them just a bit. Add the milk powder, the sugar and the salt and toss them together to mix.
- Now, Add the butter and toss until well coated.
- The mixture will form small clusters.
- Spread the clusters onto a parchment-lined sheet pan and bake at 275 degrees Fahrenheit for 20 minutes, until toasted.
- 3/4 cup butter, softened (1 1/2 sticks)
- 3/4 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- One 3.4-3.6 ounce packet instant vanilla pudding mix (not sugar-free and not 'cook & serve')
- 1 teaspoon baking soda
- 1/2 tsp Salt
- 1 3/4 cups Cinnamon PEBBLES Crispies
- 1.5 cups Vegan Mini Marshmallows
- 1 cup chocolate chips
Instructions
- You do not have to use vegan marshmallows. If you'd prefer to use regular marshmallows, do not add them until the cookies have baked for 10 minutes; then just push them into the soft cookie dough before returning to the oven for 1 more minute.
- Cream together the butter, salt, and sugars. Add the eggs and vanilla extract.
- In a separate bowl mix all the dry ingredients.
- Mix the butter and flour mixtures together.
- Add the chocolate chips, marshmallows, and Cinnamon PEBBLES crispies.
- Refrigerate for at least an hour before shaping and baking.
- On a tray make 2.5 inch cookie dough balls.
- Bake at 350 degrees Fahrenheit for 11 minutes.
- When you remove the cookies from the oven, let them sit on the baking tray for 5-10 minutes before transferring them to a cooling rack.
- Enjoy!
