My kids are picky eaters because they’re a bit high maintenance thanks to having a food blogger for a mom. lol. So, when it comes to lunch, they like it hot. That’s why every morning before school I make an Instant pot pasta for their lunchboxes.

How to make pasta in the Instant Pot
A couple tips to take your Instant Pot Cacio e Pepe to the next level:
- Serve immediately. Like all instant pot pastas, this dish is best served fresh.
- If you’re saving it for later, or sending it for lunch: add a little extra liquid to keep it creamy as it sits.
- Fresh parsley, lemon juice and some freshly shredded parmesan will knock this dish out of the park.

Recipe for Instant Pot Cacio E Pepe:
Ingredients
- 2 cups Chicken Broth
- 2 cups Water
- 1/2 tsp Salt
- 1/2 tsp Pepper
- Skinner Linguine,12-oz
- Just the Sauce Cacio & Pepe, 9.5-oz
- Fresh Parsley
- Lemon slices
- Parmesan Cheese, Freshly grated
Instructions
- In your pressure cooker pour chicken broth, water, and seasonings.
- Top with Skinner Linguine noodles that have been broken in half to fit.
- Pour Just the Sauce Cacio & Pepe over the top.
- Place the lid and set to "SEAL".
- Cook on manual for 1 minute. Let pressure release for 5 minutes.
- Vent and carefully remove lid.
- Stir the mixture well, then serve.
- Top with fresh parsley, lemons, and parmesan cheese.
- Enjoy!
