- Fresh Tomatoes, sliced (I like a combination of sizes and tomato varieties)
- Onions, sliced
- Fresh Herbs (I love thyme and/or oregano)
- Olive Oil
- Balsamic Vinegar Glaze
- Shredded Parmesan Cheese
- Salt and Pepper
Instructions
- Preheat your oven to 400F degrees
- Using premade puff pastry, cut it into rectangles the desired size for your tartlets.
- On a parchment paper-lined cooking sheet, drizzle oil and balsamic vinegar glaze in the size of your tartlets. Then, cover with onion slices, tomatoes, parmesan cheese, and fresh herbs. Sprinkle lightly with salt and pepper. add little extra pepper.
- Lay the puff pastry rectangles on top of the veggies, then crimp the edges with a fork. Sprinkle lightly with salt.
- Bake in a preheated oven until the pastry is golden and crispy. Approximately 15-18 minutes.
- Carefully slide a spatula under each tartlet and flip the pastry over. Serve with a dollop of burrata cheese.
