Making these soup jars is super simple. Here’s how:

- Soak Your Noodles: While you’re prepping your veggies, soak your rice noodles in hot water. This makes them bendable and easier to fit into the jars without breaking. Don’t fully cook them—just make them bendy so they’ll cook perfectly when you add boiling water later.

I suggest eating this delicious meal within 1-3 days, however usually these soup jars last about 3-5 days in the fridge. The cilantro and the chicken don’t stay fresh longer than that, so it’s best to enjoy them within this time frame.
Can You Freeze These Meal Prep Jars?
You can absolutely freeze meal prep jars! If you have good quality glass meal prep containers or canning-quality mason jars, they are perfectly safe to freeze and I even suggest doing so if you’ll be waiting more than 3 days to eat the soup. Just make sure to defrost the jars completely before adding the boiling water to cook the noodles, otherwise you may have to stick the whole to of it in the microwave to complete to cook.

Recipe for Simple Rotisserie Chicken Soup Jars:
Ingredients
- 1 Rotisserie Chicken
- The juices from the rotisserie chicken
- 2 teaspoons sesame oil
- 2 teaspoons umami
- 2 Tablespoons Asian Sweet Red Chili Sauce
- 1-4 teaspoons Sriracha (depending on your spicy preference)
- 1/2 teaspoon ground ginger
- 1/2 teaspoon granulated garlic
- 1/2 cup Coconut Aminos
- 4 Chicken Buillon Cubes
- 1 can (approximately 13oz) Coconut milk
- 1 package (14-16oz) Rice Noodles
- Veggies of choice: green onion, carrots, frozen corn, etc
- Cilantro
- 1 Jalapeno, sliced and deseeded
Instructions
- Combine all soup base ingredients in a pot, except the coconut milk. Bring to a simmer and let the bullion cubes dissolve.
- Then add the coconut milk and remove from heat. Let soup base cool as you prep your veggies.
- Fill a shallow dish with hot (not boiling) water and let rice noodles soak in that as your prep veggies.
- Slice your veggies thin, especially the carrots.
- In a Mason Jar or similar jar, place 1/2 cup soup base in the bottom, then layer your vegetables and chicken on top. Finally add the herbs (cilantro or other herb of choice- basil is yummy in this). I use two slices of jalapeño per jar of soup, you can add more for more heat.
- Remove the rice noodles from the water and bend them in half to fit in the jar.
- This recipe should be enough for 4 jars.
- Store in fridge or freezer.
- When ready to eat, let the jar mostly come to room temperature, then remove it's lid and add 2 cups boiling water. Replace the lid and let rest for 5-7 minutes.
- Stir and Enjoy!
