A wonderful alternative to a cup of white wine is to opt for a cup of broth or vegetable stock with a little bit of vinegar or lemon juice in it, ensuring a rich depth of flavor.
In this case, there’s no need to introduce vinegar or lemon juice, as my Shrimp and Arugula Pasta recipe already incorporates the perfect touch of lemony goodness.
As a general rule, when substituting for recipes needing ¼ cup of white wine or less, it’s entirely acceptable to omit the wine, allowing you to tailor the dish to your preferences without compromising on taste.
Recipe for 15 minute Shrimp Pasta:
Ingredients
- 4 Tablespoons Salted Butter
- 2-3 Tablespoons Garlic, minced
- 2 shakes Crushed Red Pepper Flakes
- 1-3 Dashes of Cayenne Pepper (adjust to your spice preference)
- 1 tablespoon olive oil
- 1 pound Shrimp, deveined and Peeled (frozen works perfectly)
- 1/3 cup white wine
- 2/3 cup water
- 1 chicken bouillon cube
- 3-4 cups cooked Pasta
- 2 cups Fresh Baby Arugula
- 1 Lemon
Instructions
- Combine butter, garlic, cayenne pepper, and oil in a frying pan. Simmer over low heat until aromatic.
- Add white wine, turning up the heat to med-high.
- When it starts to simmer, introduce the star of the show – the shrimp.
- Once the wine is reduced by half, add the water and the bouillon cube. Bring to a simmer.
- The shrimp should be pink by now, add in cooked noodles, fresh arugula, and the lemon lemon juice.
- Cover, simmer on low for a minute, then stir to marry the flavors.
- Your Shrimp and Arugula Pasta is now ready to be served hot.
- Season to taste with salt and pepper.
- Enjoy!
