This coconut cream pie is so super easy to make you can literally whip it together in just minutes! The flavor however is so bold and vibrant and delicious that everyone will think it took you hours to make.
The secret to boldness in every bite? Sour cream and MI-DEL graham pie crust.
Sour cream? Yes, it’s just enough to amplify the coconut flavor in a super wonderful way!
Does it need to be MI-DEL? I think so! MI-DEL Pie Crusts (which can be found at Walmart) are incredibly delicious because the crust is 30 grams thicker than other brands. Do you get what I’m saying here reader? Thicker crust means more taste and flavor in each bite. Boom baby!

Spazzy Colon
Yes, yes you did just read that correctly! I used the words “spazzy colon” in a paragraph heading of a blog post! If you don’t know what “spazzy colon” means, it’s okay because I will explain. In kindergartener terms: toots, gas, flatulence (for the really smart kindergartener!), wind, cut the cheese, etc…
Reader right about now you are probably giggling a little and wondering a lot where this is going. Well let me tell you: people with gluten allergies tend to have spazzy colons when they eat gluten!
How do I know this? you may be wondering… I’ll never tell!
Actually it’s because my Grandmother Coco has a gluten intolerance. So this Gluten-free “Coco”nut cream pie is dedicated to her!
Stomach Migraines
Do you see my little helper? We call her ZeeZee. She loves helping me cook! ZeeZee has a list about a mile long of what she wants to be when she grows up. At the top of the list: “A cook like Mommy!” It seriously warms my mama heart to know that cooking is so enjoyable to her.
My little ZeeZee girl here gets something called “Stomach Migraines”. They cause her to get headaches, stomach-aches and throw up. Due to mild allergies and intolerance’s; certain foods really seem to aggravate the condition. So we do what we can to avoid them where we can but not make her miss out on the joy that is food!
Well good news for ZeeZee: Nobody said that a healthy lifestyle, or even life with dietary restrictions (like Gluten-Free or Allergen-Safe) has to be boring or unpalatable. Sometimes you just need a satisfying snack or treat.
Today, meals can be full of overly processed foods, and this is especially true when it comes to snacks. However, MI-DEL Pie Crusts have a short ingredient list made of ingredients you can actually pronounce even if you’re a kindergartener (with a spazzy colon)!

Recipe for Coconut Cream Pie:
Ingredients
- 1 MI-DEL Graham Style Pie Crust
- 1 cup Sour Cream
- 2 3.4 oz package Instant Coconut Cream Pudding mix
- 1.5 cup milk
- 2 TBS Fresh Squeezed Lemon Juice
- 1 8oz container whipped topping
- Coconut Shavings (optional)
- Shaved Chocolate (optional)
Instructions
- In a large bowl, whip together the the lemon juice and sour cream, then whip in milk, and dry instant pudding mix.
- Lightly stir in whipped topping until well incorporated but not flattened.
- Pour mixture into the MI-DEL Graham Style Pie Crust and top with toasted coconut and chocolate shavings.
- Refrigerate for at least 10 minutes before serving.
- Can be refrigerated up to a day.
- Enjoy!
