The perfect recipe for amazing waffles that are delicious, buttery, crunchy, light and fluffy. They are perfection! The only thing that can make them better is fried chicken. Oh and this fried chicken is delightful! The most amazing blend of seasoned breading, and perfect chicken. If there is a better homemade fried chicken recipe out there; then I dare you to find it!
“Hug Time!”
I was recently walking through a grocery store with my two-year-old. As we walked, I was feeling the weight of my world on my shoulders. Life has been hard for three years and I am more than ready to close this ugly chapter and start a new one. Emotional exhaustion, anger, and sadness have been my constant companions for some time now and it really must be said; they are horrid companions!
Anyway, as we walked through the store I started to cry. I’d like to say it was a hormonal moment or the result of no sleep the night before (both of which are highly possible); however, I believe with how often this kind of thing happens, it’s just a part of me and my life.
My two year old looked up at my tears, then said “Hug Time!”
She’s so great!
“Hey thanks for being you!”
After my delightful hugs I was given a second moment of delight; Kezia pointed at the flower displays and shouted,
“Momma need flowers!”
After pausing for a moment, I decided that yes, yes Momma did need flowers.
I let her pick which flowers we bought and she chose these yellow roses. Then we came home and I looked up the symbolism of yellow roses…
When it comes to sending a joyful message, yellow roses are your best friend. In fact, yellow roses are a traditional symbol of friendship, so there you go. With their warm, sunny disposition, a bouquet of yellow roses tends to light up the room, making them a perfect way to say “Hey, thanks for being you.”
These yellow flowers were, and are, a comfort to my soul. Yellow roses are the Fried Chicken and Waffles of the flower world!

Years ago I was in Los Angeles, California. I was taking my husband to an airport so he could fly across country for an interview and then more.
Before dropping him at the airport we spent the day playing in Los Angeles. I will always remember that day. For some odd reason, it felt like I was saying goodbye forever and I drank in every moment. I knew it wasn’t logical and I wasn’t hysterical or anything; I don’t know why I was feeling that way and while there was reason for the feeling, I didn’t learn that reason for a good 5 more years. Haha!
Either way though, the day is still strong in my memory… I was wearing new mustard yellow ballet-flats shoes, with a cute tunic top, tight blue jeans and then had done my hair in beach waves; I felt more than a little cute all day.
We visited a park with big trees, a beautiful brook, and a fun playground. Then we drove up a mountain and looked at painfully beautiful views. After that we walked the walk and placed our hands inside the prints of big name stars. We visited an amazing church visitor’s center, and then finally; we ended the day with a visit to a place called Roscoe’s, where we were served fried chicken and waffles, and my world was seriously rocked (in such a good way)!
Fried Chicken and Waffles
You guys!!! Fried Chicken and waffles is the best food combination! Especially with butter on the waffles and then syrup poured over everything. Oh Lawdy!!! The most incredible food combination you will ever eat.
You may remember from my Beef Tenderloin post that when I eat good foods, then I can’t help but make crazy noises. Y’all, I was making crazy happy noises then. As were my kids with their high pitched and excited squeals. The fried chicken and waffles was more than good.
Okay y’all; enough talk! Let’s eat!!!
Recipe for World Rockin’ Fried Chicken and Waffles:
Ingredients
- 2 cups Flour
- 2 TBS White Sugar
- 2 TBS Brown Sugar
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 2 cups Buttermilk
- 1/3 cup Butter
- 1TBS Vanilla
- Scant 1/4 Oil
- 2 Lrg Eggs
- 8-12 (+) Chicken Tenders
- Peanut Oil
- 2 cups Buttermilk
- Salt and Black Pepper
- 5 cups Flour
- 1/4 cup Garlic Powder
- 1/4 cup Onion Powder
- 2TBS Paprika
- 1 TBS Cayenne
- 1 TBS Powder Sugar
- 2TBS Salt
- 1tsp Black Pepper
Instructions
- Combine all dry ingredients and set aside.
- Separate the Eggs.
- Whip the whites until stiff.
- Combine all the other wet ingredients including the egg yolks.
- Now mix the wet and dry ingredients together until well incorporated.
- Finally, stir in the egg whites. Don't over-mix, you want them to stay fluffy.
- Scoop approximately 1/2 cup batter into waffle maker and follow it's directions from there.
- Place in a 200F degree oven to keep warm while you cook the remainder of the fried chicken and waffles.
- Fill a pot with at least 2 inches of Peanut Oil (this peanut oil can be reused -for frying- up to 3 times before needing to be thrown out) and heat to 325 degrees Fahrenheit.
- Set a cooling rack over a baking sheet.
- Meanwhile, combine all the dry coating ingredients in a large bowl and mix together well.
- Pour the buttermilk into a bowl and season with some salt and pepper.
- Just before frying, dip the chicken pieces into the dry coating,
- turn the chicken to coat and then pat off any excess;
- dip them into the buttermilk, allowing the excess to run back into the bowl.;
- then dip them back into the bowl of coating.
- Carefully lower the chicken into the hot oil.
- The oil will drop in temperature with the new items in the pot.
- Adjust it accordingly so it will stay at or near the 320 degrees.
- Fry chicken for 2 minutes then carefully move chicken around or turn over in the oil and continue to fry it, monitoring the oil temperature and turning the pieces as necessary for even cooking.
- Cook approximately 6 minutes, until chicken is a golden brown, cooked through, and very crisp.
- Transfer to the cooling rack for oil to drain onto cooking sheet.
- Place in a 200F degree oven to keep warm while you cook the remainder of the fried chicken and waffles.
