I had a good friend Taylor bring a delicious Gruyere cheese dip to a friends get together. As everyone raved over her bread and spread, I grilled her about how she had made it. However, it was one of those secret family recipes that people have; It had come from her Aunt with her own special changes, but she didn’t give any specifics. Her tight-lipped-ness made me that much more determined to figure out how to make it though. I am annoyingly stubborn that way. Haha!
I don’t know that I have re-concocted her family recipe, but I love this Melted Onions, Bacon and Thyme Gruyere Cheese dip that I have come up with, and I truly think you will too.
A bit of Fancy
If you’ve read all my previous posts, you may have come across my thoughts on fancy. In my Peppermint Mocha Silk Pie post I shared my thoughts quite accurately when I said “I firmly believe every one could do with a dose (or six) of fancy in their lives each day.” And that is the honest truth. Haha! This cheese dip is actually so simple and easy to make that it probably shouldn’t qualify as “Fancy”. However, it tastes anything but simple and easy. There is no better word for it, this Gruyere Cheese dip tastes fancy. In fact, it fairly screams fancy! Gruyere Cheese dip with it’s melted onions and bits of bacon, plus thyme and cream cheese…. Mmmm! It is absolutely heavenly and can be used to class up all kinds of events; from a baby shower to a dinner party to a Superbowl get-together.
Can’t find Gruyere?
Gruyere. Doesn’t the word “Gruyere” just scream “Fabulous!” at you? The name of this delicious creamy cheese comes from a little village in Switzerland. And in keeping with the country; If you cannot find Gruyere cheese, (then that is most unfortunate); However, you can substitute the Gruyere out for Swiss cheese. The flavor wont be the same, but it will be very similar.
The Melted Onions!
This recipe calls for 2 cups of Melted Onions. However, you can actually use up to four cups of the Melted Onions! The more the merrier, and you can’t go wrong when it comes to melted onions. You will need a recipe for them though: Best ever Crockpot Melted Onions ever recipe found here.
Gruyere Cheese Dip recipe:
Ingredients
- 2 Cups Gruyere cheese, finely shredded
- 1 8 oz package Cream Cheese
- 3/4 c Sour Cream
- 1/2 c Mayo
- 2 cups Melted Onions (Recipe for Melted onions found in post above).
- 1/2 lb Bacon, chunked into 1 inch pieces and cooked to a crisp (but not burned!)
- 1-2 Dashes of Cayenne Pepper
- 1 TBS Dried Thyme -or- 1.5 tsp Thyme Powder
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- In a bowl, combine sour cream, mayo and cream cheese and blend until smooth.
- Stir in Gruyere, Bacon, Melted Onions, Thyme and Cayenne Pepper.
- Pour mixture into an ovenproof Dish and cook for 20-25 minutes until bubbly and browned on top.
- Serve with crackers, toasted bread, or whatever else your genius heart desires!
