I’m a Mama First
Dear reader, if you’re like me then you know after a long hard day of work while the kids are at school and then playing hours of taxi driver taking them to their many after school activities; sometimes cooking dinner is the last thing you want to do at the end of the day.
I’ve created a list of “20 minute meals” here on the site for days like that.
However, sometimes even that kind of prep work is a bit much.
Enter semi-homemade dinners.
Semi-homemade is OKAY
I have this habit where I put unneeded pressure on myself to be cooking from-scratch meals for my kids every time. Then I have guilt issues on days when I cave and make chicken nuggets for dinner or, heaven forbid, we go out to eat.
Well, guilt no more!
Here’s the thing: if we are feeding our families wholesome, filling meals, then why feel guilty that you didn’t do more work in the process?
My little Helper
See that adorable little hand attempting to steal food from the plate? Two things you should take note of here:
- She paints her own nails! That SOOO wasn’t a paint job done by yours truly. Hahaha!
- She doesn’t know, nor does she care, that this chicken came from the freezer section at Sam’s Club.
And her mama (aka ME!)? Doesn’t care either! Want to know why?

On the Farm
If you’ve followed my blog for a while then you know I spent a number of my younger years living on a farm. One thing we did on that farm was raise our own chickens. Reader, if you’ve never tried chicken that was grown naturally without all the added antibiotics, you’re really missing out! The flavor is unsurpassable.
Want to hear a quick funny story about a chicken? I know you do! Don’t worry, this one isn’t traumatizing like the story of my pig named Horse.
We once had a rooster that was purely evil. And since I know you’re asking: his name was Lucifer. (Perhaps we doomed ourselves when we named him after the awful cat in a princess movie. After all, anyone named after a cat would be miserable.)
Anyway, Lucifer was a Rhode Island Red Rooster. If you know anything about chicken raising then you know RIR roosters have a temper.
That darned beast would attack us every time we entered the coop to feed him. The nerve! Talk about pecking, spurning, clawing, and of course; biting the hand that feeds you! The kids assigned to chicken duty thought: Lucifer put the foul in fowl.
“Dad Lucifer is trying to kill us!!!”
After listening to his kids (clearly not exaggerated, because “we would never!”) stories of the demon rooster from hades for days in a row; my Dad decided to investigate. But what do you know? Lucifer was as docile as a kitten instead of his normal evil self.
Dad told us to just do our chores and stop complaining.
After that, my sister Christa and I took turns: one of us had guard duty against Lucifer while the other quickly filled the feed and water tins each day.
Then the day of Lucifer’s reckoning came….
One day my little brother James was trying to climb the fence to the horse pasture. Lucifer was freely roaming the farm that day which is why Christa and I were hiding out in our bedroom playing dolls.
James was about midway up the fence when Lucifer attacked. The bloodcurdling screams sent my dad running to his rescue.
We ate Lucifer for dinner. He was antibiotic free and therefore super delicious!
So many possibilities!
You guys I am so excited about all these antibiotic free chicken choices! I’m afraid you’re not seeing the whole picture here. Let me explain my excitement:

Recipe for Sweet Heat Sticky Fingers Chicken Strips:
Ingredients
- 8-10 Tyson Crispy Chicken Strips
- 5 TBS Butter
- 1/3 cup Honey
- 2 TBS Brown Sugar
- 2 TBS Hot Chili Sauce
- 1.5 TBS Apple Cider Vinegar
Instructions
- Bake Chicken Strips according to package directions.
- Combine Butter, Honey, Sugar, and Hot Chili Sauce in a small saucepan over medium-medium-high heat.
- Bring to a simmer stirring regularly.
- Let simmer one minute then remove from heat and stir in Apple Cider Vinegar.
- Set aside until Chicken is finished, then toss together with chicken strips or pour over Chicken.
